Gazpacho is a traditional Spanish soup, home to hot Andalusia. In summer, gazpacho is a must-have dish for every Spaniard, as this soup is served cold. In the classic version, only vegetables are used to prepare the soup, but there are also original types of gazpacho, for example, with strawberries.

It is necessary

  • Ingredients for 4-6 persons:
  • - ripe tomatoes of a large size - 6 pieces;
  • - sweet red pepper;
  • - a large piece of bread (it is best to use yesterday's one);
  • - strawberries - 350 g;
  • - tomato juice - 1 glass;
  • - 2 tablespoons each of olive oil and balsamic vinegar;
  • - zest of half a lemon;
  • - a few sprigs of basil and thyme;
  • - a pinch of sugar.

Instructions

Step 1

First of all, you need to remove the peel from the tomatoes: make a cross-shaped incision on them, dip the tomatoes in boiling water for 30 seconds, take them out and immediately pour them over with ice water. Remove the skin and cut the tomatoes into cubes.

Step 2

Remove the stalks from peppers and strawberries. We clean the seeds from the pepper, cut into cubes. Cut off the crust from the bread, soak it in water.

Step 3

Put tomatoes, peppers, strawberries, squeezed bread into a blender. Pour in tomato juice, balsamic vinegar and olive oil, add a pinch of sugar, salt and pepper to taste, a few basil leaves. Grind the ingredients until smooth.

Step 4

Add a few ice cubes (optional) and chopped thyme to the gazpacho, beat again and refrigerate for 2-3 hours.

Step 5

The finished dish can be served in plates or glasses, garnished with lemon zest, slices of tomatoes and strawberries.
