Instructions
Step 1
A raw food cake with mint and needles consists of two layers: the base of the cake and the cream soufflé.
To prepare the first layer, take peeled sunflower seeds, cover them with cold water and leave for at least half an hour. After the specified time, drain the water. Place the seeds in a narrow high container in which it will be convenient to work with an immersion blender.
Step 2
Rinse pitted prunes and cover with cold water also for 30 minutes. Drain the water and transfer the prunes to a container with seeds. Pour 50 ml of water here and wipe the mixture until it is as homogeneous as possible.
Line the form with cling film and put the resulting mass in a thin layer on the bottom. Place the dish in the freezer.
Step 3
To prepare the second layer in the form of a soft cream-soufflé, pour the peeled sunflower seeds with cold water and let it brew for at least 1 hour, or even better, leave it overnight, as you will need to achieve a light creamy consistency. Drain the water, transfer the seeds to a narrow high container. Add peeled and sliced banana, fresh mint and pine needles to this, also pour in 50 ml of water to facilitate the process of making the cream. Wipe the mixture until smooth and place on
first layer.
Place the mold in the freezer to set the cream.
Step 4
After 1 - 2 hours, carefully remove the cake from the mold, transfer to a dish, remove the cling film and decorate the cake as desired.
