To prepare it you will need:

  • buckwheat - 1 glass;
  • homemade cottage cheese - 300 g;
  • granulated sugar - 50 g;
  • fresh eggs - 2 pcs.;
  • butter - 1 tbsp. l.;
  • salt - a small pinch;
  • raisins are a small zhmenka.

A step-by-step recipe consists of the following steps:

  1. First step. Cook buckwheat. To do this, rinse the cereals thoroughly under cold running water. Transfer it to a saucepan and cover with 3 cups of drinking water. Use a 1: 3 ratio. Salt the water lightly. Place the pot over high heat. When the water boils, switch it to minimum. Boil the buckwheat until tender, until all the water has boiled away. Cool it completely.
  2. Second step. Transfer the buckwheat to a deep bowl. Add cottage cheese to it. It is best to take a homemade product. Before using the curd, rub it through a sieve so that the mass is homogeneous. Add granulated sugar with a pinch of salt to a bowl and beat in fresh eggs. Stir all ingredients until smooth. A multicooker is a good "friend" for every housewife. With its help, you can quickly prepare a light and healthy dinner. What is needed for this:

  • buckwheat groats - 150 g;
  • milk (medium fat) - 2 cups;
  • butter - 20 g;
  • salt and granulated sugar to taste.

Before starting cooking, sort the cereals to remove excess debris, if any. Now proceed to rinsing the buckwheat under running water. After that, transfer it to a clean container of the multicooker and pour in the required amount of milk. It is best to use homemade products that are more natural. In a bowl, add butter and salt with sugar to taste. Mix everything thoroughly with a special spoon and close the lid of the multicooker. Set the mode "milk porridge", and the cooking time is 15 minutes. After the signal about the end of cooking, proceed to a healthy dinner in the form of buckwheat porridge in milk.

To make the soup, you need the following ingredients:

  • buckwheat - ½ cup;
  • potatoes - a few medium pieces;
  • carrots - 1 piece;
  • onions - 1 head;
  • sweet pepper - 1 piece;
  • salt and spices to taste;
  • vegetable oil - 1 tbsp. l.
  • drinking water - for cooking.

For a really light soup, it is best cooked without frying. To do this, pour drinking water into an ordinary saucepan and put it on high heat. While the liquid is boiling, prepare the vegetables and cereals. Go through the buckwheat and remove all the debris. Then wash it thoroughly under running water until the flowing liquid becomes transparent.

Peel and wash all vegetables. Cut the potatoes into medium-sized cubes. Chop the peeled onions. Cut the carrots into slices and the bell peppers into thin slices.

When the water boils, transfer the buckwheat and all the chopped vegetables to the pan. Reduce heat to minimum. Add salt and spices to the water in the required amount, pour in sunflower oil. Cook the soup for 25-30 minutes, until the potatoes are tender. Buckwheat soup is best eaten warm. When it has completely cooled down, put it in the refrigerator.

Buckwheat with chicken fillet

Buckwheat goes well with meat, especially chicken fillet. It is a light dish, so it is great for an evening snack. In addition, the food will be baked in the oven. So they better preserve their beneficial properties and do not cause heaviness in the stomach.

To prepare such a dish, you must:

  • chicken fillet - 1 piece;
  • buckwheat - 200 g;
  • carrots - 1 piece;
  • onion - 1 head;
  • sweet pepper - ½ piece;
  • garlic - 1 small clove;
  • salt and spices to taste;
  • sour cream - 20 g;
  • any greens - a small bunch;
  • drinking water - 400 ml;
  • vegetable oil - 1 tbsp. l.

Rinse the chicken fillet in cold water. Cut it into medium-sized cubes, removing the veins and chaff along the way. Place the meat in a bowl. Add sour cream, a little salt and spices to it. Peel a clove of garlic and chop it with a knife or grater. Add it to the meat and mix well. Leave the chicken fillet on the table for half an hour.

Grease a suitable baking dish with vegetable oil. This can be done with a brush. Go through and then rinse the buckwheat under the tap. Transfer it to the mold, leveling it with a thin layer and salt evenly.

Peel and rinse the remaining vegetables. Chop the onion and bell peppers in the form of cubes, and grate the carrots on a coarse grater. Put pieces of sweet pepper on top of the cereal. Fry the onions and carrots over medium heat for a few minutes. Transfer the vegetables to the buckwheat pan. Send the chicken fillet pieces there. Place them evenly over the entire surface. Fill everything with drinking water. Add more salt and spices if needed.

Send buckwheat with meat to an oven preheated to 180 degrees. Cook the dish for 1 hour. Serve hot with a sprinkle of chopped herbs.
