It is necessary

  • 3 kg. peeled zucchini;
  • 1 kg. onions;
  • 1 kg. carrots;
  • 1 kg. tomatoes;
  • Salt and pepper to taste.

Instructions

Step 1

First you need to prepare the zucchini. To do this, large mature zucchini must be peeled, cored with seeds. If the zucchini is milky, tender, then the skin and core need not be removed.

Step 2

Onions, carrots, tomatoes and zucchini must be chopped through a meat grinder into different containers.

Step 3

Prepare the curling jars in advance. Banks must be thoroughly washed and steam sterilized. The same must be done with the lids. Can be used as screw caps and cans, as well as under the clamp.

Step 4

Vegetables prepared in a meat grinder are stewed in vegetable oil separately. Then all the vegetables are put in one pan, salted and spices are added, brought to a boil and cooked for another 15 minutes.

Step 5

Next, ready-made hot caviar is laid out in jars and tightened with lids. Then the jar must be turned over and put on the lid. When all the cans are ready, we cover them with a blanket and let stand for a day, after which leaked cans will be visible, the contents of which must be consumed immediately. The rest of the jars can be stored in a cool, dark place.

It is not known for certain how long such caviar can be stored in canned form, since in our family its reserves rarely survived until next summer or even spring.
