It is necessary

  • - 1 kg of zucchini,
  • - 220 grams of carrots,
  • - 150 grams of onions,
  • - 170 grams of tomato paste,
  • - 50 grams of vinegar,
  • - 1 teaspoon of salt,
  • - 2 teaspoons of sugar,
  • - ground black pepper to taste,
  • - 70 grams of vegetable or sunflower oil.

Instructions

Step 1

Soak the zucchini in water for 15 minutes. If the zucchini are overripe, peel them off and remove the seeds. It is advisable to cut the pulp itself into small cubes, but see for yourself, you can cut it into small ones. Rinse the carrots, remove all the dirt with a vegetable peeler, then pass them through a coarse grater. Peel and finely dice the onion.

Step 2

Pour 70 grams of vegetable oil into any large saucepan (about three tablespoons, look at your preferences here) and put prepared vegetables (zucchini, carrots and onions) in the oil.

Step 3

Simmer vegetables for about an hour. Look at the readiness, if there is a lot of juice from the zucchini, then simmer it for another 10-15 minutes over low heat.

Step 4

Immerse the prepared vegetables in a blender bowl and chop until smooth, salt and pepper, add tomato paste and stir. Put the mashed potatoes in a saucepan, saucepan or stewpan, which is more convenient for cooking. Put on fire and bring to a boil, stir constantly, as the puree will start to shoot. After the caviar boils, add vinegar to it and simmer a little. Arrange in jars (sterilized), and serve some of them to the table.
