Pancakes for a Russian person are not only a tasty dish - they are a genetic memory of the village, of Maslenitsa festivities, of old traditions and foundations. Guests were treated to these fried cakes, they met newborns, and saw off on their last journey. They are prepared in different ways, for example, they can be stuffed with mushrooms.

Ingredients for stuffed mushrooms

For the test, take 1 liter of milk, 2 eggs, 50 g of granulated sugar, a little salt, 1 tsp. baking powder, vegetable oil, 300 g of wheat flour.

For a delicious filling, you need 400 g of mushrooms, 1 small carrot, 1 onion, 50 g of butter, a little cheese.

Cooking method

Start making pancakes. Pour milk into the dishes, put on a low heat, wait until it becomes warm. Break eggs into a saucepan, add sugar, salt to taste, add baking powder. Add 2 tbsp. l. butter, pour in a glass of warm milk, mix all the components thoroughly with a whisk.

Sift the flour through a small sieve, add to the rest of the ingredients. After that, pour in the remaining milk, stir everything well again, the dough should turn out to be the consistency of light cream. To avoid lumps, gently introduce bulk products in a thin stream. Leave everything to sit at room temperature for about half an hour so that all the foods interact better with each other. As a result, the dough will be more uniform, it will spread well in the pan, and the pancakes will not tear when turned over.

Heat the frying pan, brush with vegetable oil or a piece of bacon. It is best to use a special pancake maker if you have a regular pan, preferably with a thick bottom and low sides. Pour the dough with a ladle, while rotating the pan so that the dough spreads evenly over it. The thickness of the pancake will depend on your skill. When the edges are browned, turn the pancake over with a spatula. So use up all the dough.

Start preparing the filling. Peel the onions and carrots, rinse. Chop the onion, grate the carrots. Fry in butter until golden brown. Take mushrooms, it will be very tasty if you have forest mushrooms, but champignons are also suitable. Boil them in boiling water for 8-10 minutes, chop finely, put with vegetables, continue to fry everything for 10 minutes, do not forget to stir. Grate the cheese, add to the mushrooms, stir. All the filling is ready.

Now stuff the pancakes. Place a tablespoon of minced meat in the middle of each, fold over the edges to form an envelope. If desired, fry the prepared pancake envelopes on both sides. Serve warm on a beautiful platter.
