Zama soup is a Moldovan national dish, served hot. Previously, it was cooked only with poultry meat, however, now it is made with fish, and without meat at all (lean zama).
The taste of the soup is quite interesting, with a sourness that kvass gives it.
Moldavian deputy is a traditional dish. There is a tradition according to which it is served on the second day of the wedding. The bride must cook the deputy, thereby she shows her culinary skills.
Feature - the addition of sour homemade kvass. If there is no kvass, then you can replace it with citric acid.
Homemade noodles are an essential part of this dish. If you take ordinary noodles, then this is no longer a deputy.
The chicken must be homemade, otherwise the taste will not be the same. Home-made chicken meat has healthier properties, it is softer and tastier.
This soup contains chicken broth, which means it can be used as a hangover cure or cold medicine.
Ingredients needed:
- homemade chicken;
- 2 onions;
- carrot;
- parsley root;
- pepper pod for pungency;
- parsley and celery;
- homemade sour kvass 200 milliliters;
- homemade noodles.
Preparation:
First you need to boil the chicken. Drain the first broth, and cook in the second until the meat is fully cooked.
For cooking noodles, break an egg, mix with flour. The dough should be firm. Roll out a thin layer and leave to rise for half an hour.
While the dough is drying, separate the chicken and cut into medium sized pieces.
Peel greens, onions, carrots and peppers and cut into small cubes, pour into broth.
Roll the dough into a tube, cut into thin strips and pour into the boiling soup.
Bring homemade kvass to a boil and pour over the rest of the ingredients.
Let it brew for 15 minutes.
