Gellert salad is a specialty of restaurants in Budapest. It is prepared from pickled beets, which are seasoned with spicy mayonnaise and beautifully spread on lettuce leaves. In the original recipe, beets are cut into strips using a special corrugated blade and the mayonnaise is prepared by hand.
It is necessary
- - 500 grams of beets.
- Marinade:
- - 1 tbsp. l. horseradish;
- - 500 milliliters of water;
- - 2 tsp vinegar;
- - 1 tbsp. l. cumin;
- - 1/2 tsp. sugar and salt;
- - 5 tbsp. l. mayonnaise;
- - 1 tsp. lemon juice;
- - a bunch of lettuce leaves;
- - 5 stalks of parsley;
- - 1 tsp. mustard;
- - lemon slice.
Instructions
Step 1
Boil the beets and let them cool to warm.
Step 2
Peel the vegetables, cut the roots. Beets can be peeled directly with your hands. It is convenient to do this under running cold water.
Step 3
Cut the tubers into 70mm washers.
Step 4
To prepare the marinade, combine sugar, salt, vinegar, cumin, horseradish.
Step 5
Top up with 500 ml of warm water and stir.
Step 6
Place the beetroot plates in the marinade, then cover with plastic wrap and when the mixture has cooled, put it in the marinating refrigerator for ten hours.
Step 7
When the time is up, drain the marinade and lay out the thick. But do not remove what remains on the beet slices.
Step 8
Cut all the plates into 50 millimeters thick noodles. Mix gently.
Step 9
To make the dressing, combine the mustard and lemon juice. Stir.
Step 10
Place the beets in the mayonnaise and gently turning the layers over to stir the salad.
Step 11
Put the lettuce leaves, lay the mixture beautifully on them.
Step 12
Garnish the salad with chopped parsley and a slice of lemon.
