Vegetarian pickle is very easy to make. If you don't eat meat, are fasting, or just decided to indulge in vegetable dishes, then this soup is a great way to save lunch.
It is necessary
- - water 2-2.5 l;
- - pearl barley groats 1/3 cup;
- - onion 1 pc.;
- - potatoes 4-5 pcs.;
- - carrots 1 pc.;
- - pickled cucumbers 2 pcs.;
- - black peppercorns 5-6 pcs.;
- - bay leaf 1 pc.;
- - 1/2 cup cucumber pickle.
Instructions
Step 1
Rinse the pearl barley thoroughly several times. Then pour boiling water over and leave for 30-40 minutes.
Step 2
Pour water into a saucepan, add pearl barley and simmer. The groats should be soft.
Step 3
Peel and wash potatoes, onions and carrots. Cut the potatoes into small cubes. Once the pearl barley is soft, add the potatoes, bay leaves, and allspice to the pot.
Step 4
Grate the carrots on a coarse grater. Chop the onion. Heat vegetable oil in a frying pan, fry the onions and carrots in it until the vegetables are soft.
Step 5
Grate pickled cucumbers on a coarse grater or cut into small pieces. Add the sautéed vegetables and cucumbers 10 minutes before the potatoes are ready. At the very end, pour in the cucumber pickle. Taste the broth, add a little salt. Let the soup brew under the lid.
