In order for a meal to really benefit you, it must "meet" certain conditions:

  • lunch should be at the same time;
  • before lunch, there must be breakfast and about 4 hours must pass between them;
  • you need to have dinner at least half an hour; lunch should be nutritious;
  • start your lunch with vegetables or salad - this will normalize digestion;
  • food should induce appetite; the serving size should be such that you do not feel hungry, but also do not overeat;
  • try to avoid hearty desserts that contain fast carbs.

Here are some recipes that will help you not only cook a healthy lunch, but also surprise your household and guests. For example, you can make a chicken fillet stuffed with tomatoes. To prepare it, you will need one chicken breast (for one serving), half a leek stalk, a small tomato (if desired, you can replace it with canned tomatoes); greens, olive oil, spices.

Saute herbs in oil over low heat in a frying pan and add tomatoes there. If you have a little homemade broth, you can add a little - this will give the filling a richer flavor, then add spices to taste, stir again and remove from heat. You need to preheat the oven to about 180 degrees.

While the oven is preheating, slice the chicken fillet lengthways so that it is “open”. Then the fillet must be beaten off through plastic wrap, pepper a little and salt. Take a sheet of foil and place the prepared fillet on it, then spread the filling evenly and gently roll the roll, which must then be wrapped in foil. Such a dish is prepared for 15 minutes in the oven. This roll can be served as a separate dish or with a side dish.

Another simple recipe is mushroom and vegetable stew. This dish is prepared very simply and quickly, and any housewife can handle it. So, to make the stew, you will need 300 grams of fresh mushrooms, large eggplant, a couple of medium zucchini, three bell peppers, green onions, spices, oil.

Fry the diced eggplant in hot oil for 1-2 minutes, then add the sliced courgette. This mixture should be cooked under the lid for about 5 minutes. At the same time, in another pan, you need to fry the mushrooms, cut into thin plates. The mushrooms then need to be added to the first pan to the vegetables, pepper and salt the mixture.

Chop green onions and peppers and cut into small cubes. Add these ingredients to vegetables, stir all the times and simmer covered for 5-7 minutes. Stew can be served as a separate dish or as a side dish for meat.
