- strawberries - 500 gr;

- For the second recipe:
- shortbread cookies - 200 gr;
- butter - 100 gr;
- cottage cheese - 500 gr;
- sour cream - 500 gr;
- sugar - 400 gr;
- blueberries - 200 gr;
- gelatin - 2 tbsp. spoons;
- cream - 200 gr.
- For the third recipe:
- chocolate gingerbread - 500 gr;
- sour cream - 700 gr;
- sugar - 150 gr;
- bananas - 4 pcs;
- berries - 100 gr;
- chocolate - 50 gr.
Instructions
Step 1
To make a strawberry waffle cake, separate 4 proteins, then beat them into a white fluffy foam, gradually adding 100 grams of sugar. Pass 250 grams of shortbread cookies through a meat grinder along with the same amount of walnuts. Combine the ground mixture with proteins and mix thoroughly.
Step 2
Place the prepared filling on top of the waffle crust and place 500 grams of clean, dry strawberries on top of it. In a separate bowl, beat 250 grams of soft butter with 4 yolks and powdered sugar. Spread the resulting cream evenly over the strawberries, and cover with a second waffle crust on top.
Step 3
Make a blueberry curd cake. To do this, grind 200 grams of shortbread cookies, mix with 100 grams of melted butter, put on the bottom of a split form and put in the refrigerator for 1 hour. In a deep bowl, beat 500 grams of cottage cheese and the same amount of sour cream with 400 grams of sugar. Use a blender to chop 200 grams of blueberries.
Step 4
Divide the curd mass into two parts so that one is a quarter larger than the other. Mix the smaller part with the blueberry puree. Dissolve 2 tablespoons of gelatin according to package directions, add to a saucepan of hot cream and stir.
Step 5
Divide the prepared mixture in half and add to both parts of the curd cream. Remove the baking dish from the fridge, place a baking paper ring along the side and lay out the filling, alternating between white and blueberry layers, then refrigerate the cake until it solidifies.
Step 6
To make a gingerbread cake, mix 700 grams of sour cream with 150 grams of sugar until completely dissolved. Cut 500 grams of gingerbread into slices and, dipping them in sour cream, put on a dish in an even layer.
Step 7
Place the banana slices on top and continue to alternate layers until the gingerbread is finished. Cover the top layer with the rest of the sour cream and sugar, garnish with grated chocolate and your favorite berries.
