Ashure refers to Turkish cuisine. This dish is prepared for the holiday that bears the same name. As a rule, a Turkish hostess needs about twenty-five ingredients to prepare ashura.

  • - milk - 250 ml;
  • - sugar - 0.5 cups;
  • - grated lemon zest - 1 tsp;
  • - grated orange zest - 1 tsp;
  • - salt - 0.25 tsp;
  • - ground cinnamon - 0.5 tsp;
  • - ground ginger - 0.5 tsp;
  • - ground anise - 0.5 tsp;
  • - carnation - 5 pcs;
  • - a pinch of ground black pepper;
  • - almonds (kernels) - 100 g;
  • - poppy seeds - 1 tbsp.;
  • - sesame seeds - for decoration;
  • - pomegranate (grain) - for indication;
  • - dried dates - 20 pcs;
  • - dried figs - 10 pcs;
  • - raisins - 100 g.

Instructions

Step 1

To prepare ashura, start by preparing beans and chickpeas. This must be done in advance, as it will take several hours to soak the beans in water.

After the required time has passed, drain the water and rinse thoroughly both the chickpeas and the beans. In this case, you should not combine both types of legumes. Pour chickpeas with cold water in the ratio: 1 part chickpeas to 3 parts water. Put on fire. Simmer for 1-1.5 hours, until the chickpeas are tender.

Pour the beans with cold water in the same ratio as the chickpeas, that is, 1: 3. Simmer over low heat until soft. Remember that beans are better overcooked than undercooked, as undercooked beans are poisonous. The bean boiling process can take about two hours.

When the beans and chickpeas are cooked, drain off the rest of the water and set the beans aside without mixing.

Step 2

Pour rice and bulgur with 2 liters of water. Put the poppy here. Peel the dates, cut them arbitrarily and add to the saucepan to the rice and bulguru. Put on low heat and cook until soft, which takes 30-40 minutes. If necessary, add another glass of water while cooking.

Step 3

Now place the diced figs, as well as the previously prepared beans and chickpeas in a saucepan of rice and bulgur. Simmer on the lowest heat for 10 minutes. Now put sugar, spices here, pour in milk. Continue cooking ashure for another 5 minutes. Then remove from heat.

Step 4

And immediately add the raisins and half the sliced almonds to the ashure saucepan. Stir.

Place the ashura in bowls or place in a deep dish. Garnish with grated lemon and orange zest, pomegranate seeds, toasted sesame seeds, and leftover minced almonds.
