- - 1/3 cup natural yogurt;
- - 2 cloves of garlic;

- - black pepper;

- - 1/4 tsp chopped ginger;

- For sour cream-olive sauce:
- - 2 tbsp. sour cream with a fat content of 10-15%;
- - 2 tbsp. olive oil;
- - 1 tsp soy sauce or a pinch of salt;
- - greens;
- - spices.
- For curd sauce:
- - 100 g of granular cottage cheese;
- - 1 glass of milk;
- - 1/2 tsp ground cumin;
- - 1 tsp Sahara;
- - a pinch of salt.
Instructions
Step 1
Vinaigrette sauce
For vegetable salads, the classic vinaigrette sauce is perfect. Finely chop 2-3 green onion feathers, mix with ½ tbsp. mustard and ¼ tsp. salt. Using a whisk or mixer add ½ tbsp. fresh lemon juice and ½ tbsp. wine vinegar. Whisking, gradually pour in 1/3 cup olive oil in small portions, and at the end add freshly ground pepper to taste.
Step 2
Vinaigrette sauce is prepared in various versions. For example, green onions can be replaced with chopped garlic. For flavor, add lemon zest to the dressing, and for a rich taste, add herbs (parsley, dill, cilantro, basil, tarragon, etc.).

Mustard Lemon Sauce
Squeeze the juice from 2 lemons, chop 2 cloves of garlic and stir with 1 tablespoon. mustard powder and a pinch of salt. Beat the mixture with a mixer and gradually pour in 100 g of vegetable oil until a homogeneous emulsion is obtained.

Yoghurt sauce
Meat and poultry salads are well complemented by yoghurt sauce. Take 1/3 cup of natural unsweetened yogurt, salt to taste, add finely chopped dill, 2 cloves of garlic and black pepper. For piquancy, you can include ground walnuts, ginger and other spices in the recipe.

Sour cream-olive sauce
A healthy alternative to mayonnaise is sour cream with a fat content of 10-15%, mixed with olive oil and a little soy sauce or salt. Interesting and unusual variations can be obtained by adding various types of herbs and spices to the dressing.

Curd sauce
Rub 100 g of granular cottage cheese through a sieve or grind in a blender, salt to taste, add 1/2 tsp. ground cumin and 1 tsp. Sahara. Then gradually pour in 1 glass of milk and stir until the consistency of sour cream.
