It is necessary
- For the dish:
- - 100 g of trulli pasta;
- - 25 g smoked ham;
- - 2 tbsp. spoons of parmesan.
- For pea pesto:
- - 150 g frozen green peas;
- - 3 sun-dried tomatoes;
- - 2 cherry tomatoes;
- - 3 cloves of garlic;
- - 5 tbsp. tablespoons of olive oil;
- - 3 tbsp. spoons of parmesan flakes or pine nuts;
- - 1 lemon;
- - ground pepper, sea salt.
Instructions
Step 1
Boil the trulli pasta until tender. You can take other pasta if you were unable to purchase trulli. Boil the green peas in boiling salted water for 3 minutes, then drain the water, pour over ice water and let the liquid drain from the peas.
Step 2
Peel the garlic, chop finely. Grate the Parmesan on a fine grater. Cut fresh and sun-dried tomatoes into small cubes. Heat a dry, clean frying pan, dry pine nuts on it.
Step 3
Now combine the peas, nuts, parmesan and 2 tablespoons of olive oil. Punch lightly with a hand blender. Add the tomatoes, garlic, a small amount of lemon zest, and the remaining olive oil. Season with salt and pepper to taste. Punch again with a blender, do not mix until completely homogeneous. The pea pesto should be uneven in consistency.
Step 4
Drain the pasta and mix with the pea pesto. Add the serrano ham (if you didn't find it on the market, then replace with any other ham). Sprinkle generously on the trulli with pea pesto and serrano with grated Parmesan and serve immediately until the cheese has melted.
