For a long time in Russia it was the custom that not a single meal was complete without pies and pies. You can buy the dough for them in the store, or you can cook it yourself, and use various products for the filling.

- For puff pastry:

- - 250 g butter;

- For light puff pastry:
- - 600 g of wheat flour;
- - 300 g creamy margarine;
- - 2 tsp baking powder;
- - 2 tsp salt;
- - 8 tbsp. l. ice water.
- For meat filling (for 500 g of puff pastry):
- - 350 g ground beef;
- - 350 g minced pork;
- - 1 egg;
- - 100 g of onions;
- - ½ tsp salt;
- - vegetable oil.
- For apple filling (for 500 g of puff pastry):
- - 500 g of apples;
- - 100 g of sugar;
- - 10 g of cinnamon;
- - ½ lemon;
- - 1 egg.
Instructions
Step 1
Puff pastry
Sift flour with a slide and make a depression in the center. Beat the egg in a separate bowl, pour in cold water, add salt and citric acid. Mix everything well. Pour the mixture into the flour well and knead to a smooth dough. Cover it with a napkin and place it in the refrigerator for half an hour.
Step 2
Mix the butter with 3 tablespoons of flour until smooth. Form a square out of the prepared mixture and put it in a cold place.
Step 3
Remove the dough and butter from the refrigerator and roll them out individually so that the dough is a square larger than the butter. Place the prepared butter mixture at a corner in the middle of the rolled dough and fold the edges of the dough with an "envelope". Roll into a layer 1, 5 centimeters thick. Roll it 3-4 times, cover with a damp cloth and refrigerate for 30 minutes.
Step 4
Then roll out the dough again into a layer, then fold it several times again and put it in the refrigerator for 15 minutes. Repeat this procedure 3 more times.
Step 5
Light puff pastry
Sift flour into a large bowl, add baking powder and salt. Mix thoroughly. Then add the creamy margarine and chop it with the flour mixture with a knife until the mass looks like large crumbs. After that, gradually, one spoon at a time, pour in ice water, stirring the dough with a fork. When it starts to stick together, transfer the dough to a floured table and continue kneading until smooth.
Step 6
Puff pastries with meat
Peel and finely chop the onions. Combine the minced beef and pork, add the onion, salt and mix thoroughly. Pour vegetable oil into the pan and fry the meat filling in it. Roll out the puff pastry, cut into squares. Place on each minced meat you cooked, shape the patties into triangles or envelopes and pinch. Spread the pies on a baking sheet, brush each with a beaten egg and place for 25 minutes in an oven preheated to 200 ° C to bake.
Step 7
Puff pastries with apples
Peel the apples and chop finely. Drizzle with lemon juice, add granulated sugar, cinnamon and mix thoroughly. Set the filling aside for the apples to juice, then drain. Roll out the puff pastry, cut into squares and place the apple filling on them. Pinch the edges, brush the beaten egg over the patties and transfer to a greased baking sheet. Preheat oven to 180 ° C, place puff pastries in it and bake for 20 minutes.
