It is necessary

  • Required: medium carrots for 100-110 gr,
  • 100 grams of brown sugar (white sugar can also be used),
  • 100 grams of fried hazelnuts, chopped into crumbs in a blender,
  • 100 grams of soft butter at room temperature (take it out of the refrigerator an hour or two before cooking),
  • 4 tbsp. tablespoons of cream 10%,
  • 1 tbsp. a spoonful of Amaretto (you can add cognac, another liqueur, or even do without this ingredient),
  • 100 grams of flour + half a teaspoon of baking powder,
  • 2 tbsp. spoons of honey and 30 grams of butter - for honey glaze,
  • cinnamon, cardamom, nutmeg - pinch at a time,
  • sesame seeds - for decoration (you can replace with chopped nuts or not decorate),
  • some butter and flour - for sprinkling the baking dish.

Instructions

Step 1

Three carrots on a fine grater, add a little sour cream or cream to it, mix and let stand for 10 minutes.

Step 2

Grind the hazelnuts in a blender until crumbs.

Step 3

In a deep bowl, mix warm butter with brown sugar, add yolks and stir. Add flour with baking powder, mix thoroughly. Pour in 2 tbsp. tablespoons of cream and mix again.

Step 4

Add carrots and nuts to the dough, another 2 tbsp. tablespoons of cream, 1 tbsp. spoon Amaretto, spices and mix again until smooth.

Step 5

Beat 2 squirrels with a pinch of salt until strong peaks.

Step 6

Gently add proteins to the carrot dough: first half of the proteins to lighten the dough, then the remaining half. We do not interfere for a long time so that the bubbles of proteins do not burst.

Step 7

We spread the dough in a mold, greased with butter and sprinkled with flour. In the middle of the dough, we make a small depression so that the dough, when raised in the oven, does not grow up as a slide, but level with the general level of the crust.

Step 8

We bake the pie in an oven preheated to 180 degrees until cooked (I had a 26 cm shape, so the pie was baked for 40 minutes; if the shape is smaller in diameter and higher in height, then it takes longer).

Step 9

Cover the cooled cake with honey glaze. For the glaze, melt the honey with butter, wait for the bubbling mixture to sweat for a couple of minutes and pour it onto the pie at once. We quickly level the glaze - it hardens quickly, and therefore after a minute it is difficult to smooth it out with an even layer over the cake. Sprinkle sesame seeds on top of the glaze.
