  • - 1 onion;
  • - 1 large orange;
  • - 1 tbsp. olive oil;
  • - mint for serving.

Instructions

Step 1

Boil or bake the beets until tender. Keep in mind that beets take a long time to cook, so prepare them ahead of time! Then peel and cut into medium cubes.

Step 2

Wash the orange thoroughly, preferably with a brush. In general, if there is such an opportunity, give preference to organic fruits, which are not covered with a layer of wax. Then carefully, using a vegetable peeler or grater, remove the zest from the orange. If using a vegetable peeler, cut the zest into strips.

Step 3

Squeeze the juice out of the orange itself.

Chop the onion into small cubes. In a thick-walled saucepan, heat the olive oil and water mixture and add the onion cubes and half of the whole zest. Cook until soft.
