Croquettes are a beautiful French word for crispy balls. This is a small product made of ground meat, fish, potatoes and cereals, breaded in flour or breadcrumbs and fried in oil. The most common type of croquettes are potato or meat-cereals, but there can also be meat with various additives. Croquettes are served on the table with a side dish or in a specially prepared mushroom and meat sauce.

Instructions
Step 1
Take raw beef. Peel the meat from the veins, wash and cut into small pieces of 40 g. Pre-soak the white bread in a container, add milk. Scroll the meat twice through a meat grinder along with the prepared bread.
Step 2
Take the onion, peel it, wash it, cut it into several pieces and twist it in a meat grinder, you can add a little chopped garlic. Mix the minced meat, salt.
Step 3
Separate the egg yolk with a special tool, add to the minced meat. Temporarily refrigerate the egg white. Wash the parsley, dry on a plate and chop finely. Add chopped greens to the prepared mass, put black ground pepper and mix everything well. Let the minced meat stand for 10 minutes.
Step 4
Rinse the raisins well, pat dry on a paper towel. Cut the minced meat into small cakes the size of a walnut, add a little prepared raisins to each product. Form balls.
Step 5
Beat the egg white well with salt; use a mixer for this. Soak croquettes in this mixture. Prepare the breadcrumbs, pour them into a plate. Bread the prepared balls in breadcrumbs.
Step 6
Take a container for frying croquettes, heat it well, add vegetable oil. Add croquettes and sauté over medium heat for 10 minutes, then cook in the oven until cooked. Serve ready-made croquettes with any side dish. Croquettes go well with mashed potatoes or fried potatoes. If desired, you can separately serve lemon slices with the dish.
