Croquettes are one of the most popular Dutch national dishes. Deep-fried crispy balls or cylinders can be filled with a wide variety of foods - potatoes, meat, and even shrimp. They are served as a snack for beer or as an independent dish with french fries for a side dish. Classic Dutch croquettes are made from chicken.

500 g chicken fillet; - 250 ml of water; - 200 g of butter; - 200 g flour; - 1 egg; - salt, pepper, nutmeg; - parsley; - bread crumbs; - deep fat oil; - Bowl; - frying pan
Instructions
Step 1
Take chicken fillet, rinse well, put in a saucepan, pour a little water so that it only covers it lightly. Add salt, simmer over medium heat until broth is about one quarter boiled away. Take out the meat, let it cool well.
Step 2
Meanwhile, melt the butter over low heat. Grind the meat in any way you can. You can do this by hand using a food processor, blender, or meat grinder. Add flour and melted butter to it, knead until a homogeneous smooth mass is obtained, resembling mashed potatoes in consistency. If the mass is too steep, you can dilute it with broth.
Step 3
Chop the parsley, finely grate the nutmeg, add both spices to the croquet mince, stir well. Put everything in a bowl, cover, refrigerate at least overnight. If you are in a hurry, you can wait just a couple of hours, but in this case you will have to add more flour to prevent the croquettes from falling apart.
Step 4
Form small croquettes with wet hands. It can be either balls with a diameter of 1 to 2 cm, or cylinders measuring 1-2 by 3-4 cm. Dip them in a beaten egg, roll in breadcrumbs on all sides.
Step 5
Heat vegetable oil in a skillet until a slight haze appears over the surface. Dip the croquettes in deep fat, fry until golden brown, place on a paper towel to remove any remaining fat. If you have a deep fat fryer, you can use that as well.
