It is necessary

  • For five servings:
  • - 450 ml of milk;
  • - 450 ml cream, 33% fat;
  • - 6 egg yolks;
  • - 1 vanilla pod;
  • - 6 tbsp. tablespoons of fructose.

Instructions

Step 1

Cut the vanilla pod in half and remove the seeds. Pour cream and milk into a saucepan, add 2 tablespoons of fructose, pod and vanilla seeds. Put on medium heat, bring to a boil.

Step 2

Beat the egg yolks with the remnants of fructose, pour in the ladle of the creamy milk mixture, beat again. Then another ladle, beat again. Continue doing this until everything is in one bowl.

Step 3

Put this mixture on low heat, stir with a wooden spoon. When the mixture begins to thicken, remove the pan from the stove. The result is a delicious custard.

Step 4

Strain this cream through a fine sieve, this is a rather painstaking work.

Step 5

Take an ice cream tray, pour the cream into it, put it in the freezer.

Step 6

Whisk the ice cream every 2 hours until smooth.
