Fresh cherries are sold everywhere and the weather is hot and sunny outside - everything hints that it's time to make this wonderful ice cream!
It is necessary
- - 200 ml heavy cream;
- - 200 ml 2.5% milk;
- - 2 yolks;
- - 150 g of sugar;
- - 3 tbsp. vanilla sugar;
- - 200 g cherries or cherries.
Instructions
Step 1
Remove seeds from cherries or cherries.
Step 2
Pour the milk into a saucepan and bring to a boil. As soon as it boils, remove from heat.
Step 3
While the milk is boiling, the yolks should be whisked with sugar and vanilla sugar into a cream.
Step 4
Then pour half of the hot milk over the yolks, stirring them actively with a whisk. Pour the yolk-milk mixture to the remaining milk into a saucepan and place on the stove over medium heat. Cook, stirring occasionally, until the mixture begins to thicken - this will take about 5 minutes.
Step 5
Remove the thickened mass from heat, allow to cool to room temperature and refrigerate for an hour.
Step 6
Beat the chilled cream with a fat content of 33-35% with a mixer until stable peaks. Gently, but thoroughly, mix with a wooden spatula with the cooled yolk-milk mass and pour into a freezing container. Put in the freezer for 3 hours.
Step 7
After 3 hours, remove the ice cream from the freezer and beat with a mixer. Return to the cold for 2-3 hours, and then repeat the procedure again.
Step 8
Cut the pitted cherries or cherries into halves and add to the whipped ice cream (with the last whipping). Put ice cream in the freezer overnight.
