There is a specialty sweet dish in French cuisine made of berry or fruit syrup whipped into foam with the addition of a gelling agent and it is called mousse (from the French mousse - foam).

Step 1
Whisk feijoa in a blender with sugar syrup.
Step 2
Punch almond powder, flour, sugar, chopped butter in a blender until uniform granules.
Advice! You can also make almond powder at home. To do this, you just need to grind almonds with a small amount of coarse sugar in a blender. Transfer the resulting dough with crumbs to a baking sheet and place in a preheated oven to brown the crumbs.

Whip the cream and transfer to a separate bowl.
Step 4
Combine sugar with water and yolks and cook the sauce in a water bath, stirring constantly until a thick foam forms. Add gelatin, lemon zest, lime zest. Add mascarpone, cream and mix well. The mousse is ready!
Step 5
Dip the glass in colored sugar. Place some of the crumbs in a glass, put strawberry jelly on one side, and feijoa puree on the other. Squeeze the cream on top of the puree. Lay out the strawberries.
