Risotto is one of the most popular dishes in Italy. Its main ingredient is round rice, which contains a high percentage of starch. This gives the dish a creamy consistency. Risotto can be prepared with various additives - vegetables, fish, mushrooms, meat, etc. The simplest recipe is bacon and bell pepper risotto. The dish turns out to be a little specific, but the taste is amazing.

It is necessary

  • - rice 300 g
  • - onion 150 g
  • - bacon 200 g
  • - bell pepper 200 g
  • - hard cheese 100 g (preferably "Parmesan")
  • - dry white wine 150 ml
  • - butter 4 tbsp. spoons
  • For broth:
  • - chicken 1 kg
  • - onion 200 g
  • - carrots 200 g
  • - black peppercorns 7 pcs.
  • - laurel litas 3 pcs.
  • - dried herbs 2 tbsp. spoons
  • - salt

Instructions

Step 1

First you need to prepare the broth. To do this, cut the chicken into pieces. For convenience, you can use the chicken soup set.

Step 2

Coarsely chop the carrots and onions.

Step 3

Pour chicken and vegetables with two liters of water, add peppercorns and cook the broth for an hour. During the cooking process, it will be necessary to remove the scale.

Step 4

After the time has elapsed, the broth must be salted, add dried herbs and continue to cook for another 30 minutes. Add bay leaves 10 minutes before the broth is ready.

Step 5

The broth will need to be filtered to make it more transparent. It will take 1.5 liters to make risotto.

Step 6

Cut the bacon into strips, and the pepper into small cubes. Fry the ingredients in vegetable oil for about 10 minutes.

Step 7

Melt the butter in a separate saucepan, add the onion and fry until transparent. The onions should not be fried.

Step 8

Rinse the rice and add to the onion. Continue frying for 1-2 minutes.

Step 9

Pour in wine. After a couple of minutes it will evaporate and then 100 ml of chicken broth should be added. Stir the rice continuously until it absorbs the broth.

Step 10

Continue adding broth in portions. When about half of it remains, add pepper and bacon to the rice, mix well and continue to pour in the broth in the same way, 100 ml each.

Step 11

The rice will cook for 20 minutes, during which time all the broth should be used. At the very end, add butter and grated cheese to the rice. The dish should be served immediately.
