Whisk in a separate bowl 100 grams of 38% fat cream along with one tablespoon of powdered sugar. Gently combine the blueberry puree with the cream. Then the cream will be ready for use.

Make coffee cream. To do this, pour 2 tablespoons of ground coffee with 200 grams of boiling water and stir thoroughly. Brown one tablespoon of sugar in a skillet, add 50 grams of hot water and boil the syrup. Pour it over the brewed strong coffee and stir. In a separate bowl, beat 2 egg yolks with 2 tablespoons of sugar, add 2 tablespoons of flour. Mix the yolk mass with 100 grams of cold cream of 20% fat, then combine the resulting mixture with coffee and heat until thickened. Add 50 grams of butter and cool.
