Place the dough in the cold and cook the streusel. 2 tbsp. mash flour with 40 g of butter, 2 egg yolks and 2 tbsp. tablespoons of sugar. Knead the mixture until it starts to crumble. If crumbs do not form, refrigerate the mixture and add some more flour to it.
Roll out the finished dough into a layer about 5 mm thick. Lubricate it with jam, spread the streusel on top. Place the dough in the cold and wait for the dough and streusel to harden. Using a sharp knife, cut the layer into diamonds or strips and place the cookies on a baking sheet. Bake the products in an oven preheated to 240 ° C until the streusel is golden brown. Remove the biscuits from the baking sheet, refrigerate and place on a platter.
