Step 1

Put it in a fireproof bowl, add 100 grams of sugar, 1 yolk, and 2 tablespoons of milk. Place in a water bath, stirring constantly, until sugar and chocolate are dissolved. The mixture should thicken slightly. Remove from the bath and set aside.

Step 2

Beat 50 grams of butter with sugar (100 grams) until smooth. Add the yolk and beat well again. Add the flour mixture in several stages, alternating with 2 tablespoons of milk and 2 tablespoons of water: flour - milk - flour - water - flour. Add chocolate mixture and beat until smooth. Turn the oven on at 170 ° C.

Beat 80 grams of butter and 125 grams of cream cheese with a mixer until smooth. Add chocolate mixture, cocoa powder and beat thoroughly again. Combine with 150 grams of fat sour cream and beat again. The cream is ready. Use it right away, otherwise it will harden quickly.

Cut the cake into 2 parts with a thin long knife. Put one half on a dish, brush with a layer of cream and cover with the other half. Cover the top and sides of the cake with cream and refrigerate for 2-3 hours.
