Step 1
Separate the whites from the yolks. Heat the butter on the stove or in the microwave, it should melt slightly. Combine the warmed butter with flour, egg yolks and 50 g sugar. Knead the dough, put it in the refrigerator for 30-40 minutes.
Step 2
Whisk the egg whites and sugar until a firm foam forms. Pour boiling water over the almonds and grind into coarse crumbs. Combine it with the whipped egg whites and heat the mixture over low heat.
Step 3
Remove the dough from the refrigerator, roll it out in a layer 1-1.5 cm thick. Cover the baking sheet with baking paper and grease it with butter, put the dough on it and bake in the oven for 10 minutes at 190 degrees.
Step 4
Remove the baking sheet from the oven and spread the egg-almond paste on the hot crust and place it in the oven to bake for another 10 minutes.
