Rice soup with squid will appeal to all lovers of seafood dishes. Making an original soup is very easy and quick.

Step 1
Peel the squid and cut into thin rings. Grate carrots on a coarse grater, chop tomatoes and onions.

Lightly fry the onions and carrots in vegetable oil. The readiness can be judged by the appeared golden hue. Add chopped tomatoes to the mixture and simmer for 10 minutes.

Boil rice in lightly salted water. Once it's done, add the sautéed onions, tomatoes, and carrots. Continue to cook all the ingredients while boiling the sliced squid rings.

Once the squid is done, add it to the rice and bring the soup to a boil. Season with salt and pepper to taste. Before serving, you can decorate the dish with herbs, an egg cut in half, or season with sour cream.
