1 kilogram of flour, 0.5 liters of milk, 70 grams of yeast, 5 eggs, 200 grams of granulated sugar, 300 grams of butter, 200 grams of peeled almonds, 1 lemon zest, 150 grams of raisins, 2 teaspoons of salt

Step 1
Dissolve the yeast in a little warm milk with a spoonful of sugar.
Step 2
Add flour and diluted yeast to the remaining warm milk. Cover the saucepan with a towel and let it roam.
Step 3
Whisk 4 yolks with the remaining sugar. Grate the lemon zest. Chop the almond kernels.
Step 4
Add whipped yolks, zest, melted butter, half almonds, raisins, salt to the risen dough. Stir.
Step 5
Beat the whites of 5 eggs and mix gently into the dough. Transfer the dough to a mold and leave for half an hour.
Step 6
Brush the surface of the cake with yolk, sprinkle with almonds and bake until tender.
