Do not open the oven door and pour the juice over the bird. First, you change the temperature in the oven every time and the chicken is baked at a low temperature for a while, which is not good for the dish. Secondly, by pouring hot fat on the breast, you only speed up the process of cooking tender meat, which is already cooked quickly. As a result, when the rest of the poultry is baked, it is this meat that will be overdried.

When the bird is ready, remove it from the oven and wrap it in foil to let the meat “rest” for 10-15 minutes. This time will be enough for you to prepare the sauce of your choice.
