Boiled beef tongue is a classic festive dish. Even without any additives, a properly prepared tongue will be tasty and appetizing. Prepare a second dish from your tongue by boiling it in bolognese sauce.

- - beef tongue
- - tomato paste - 100 g
- - onions - 2 pcs.
- - vegetable oil - 5 tbsp. l.
- - flour - 2 tbsp. l.
- - greens - 1 bunch.
- - hard cheese - 30 g
- - sugar - 2 tbsp. l.
- - salt - 1 tsp.
Instructions
Step 1
Boil the beef tongue for 2-3 hours. Salt the broth after boiling, add seasoning to taste, toss in the bay leaf, peeled carrots and one onion.
Step 2
When ready, remove the tongue from the broth and immediately immerse it in cold water, so that it can then be easily peeled from the skin. Cut into wedges.
Step 3
Spread the onions for the bolognese sauce. Combine flour and tomato paste with 100 ml of cold water. Mix everything until smooth. Pour the sauce into the fried onions and let it simmer for a bit.
Step 4
After 10 minutes add seasoning, salt and sugar. If the sauce is very thick, add a little broth. Add pepper, salt and sugar to the sauce to taste until the bolognese is richly sweet, salty and spicy at the same time.
Step 5
Put the pieces of tongue in the bolognese and let "marry" under the lid for 10 minutes over low heat.
Step 6
Serve the sauce with pasta or mashed potatoes, sprinkling with grated cheese on top.
