Vegetable spinach soup can be considered a dietary soup if cooked in vegetable broth. And on meat or fish broth, it turns out to be very rich and satisfying. Soup is served with sour cream.
It is necessary
- For eight servings:
- - 500 g of meat;
- - 500 g of potatoes;
- - 200 g tomatoes;
- - 200 g of white cabbage;
- - 100 g spinach;
- - 100 g onions;
- - 50 g of celery root, parsley;
- - 2 tbsp. tablespoons of vegetable oil.
Instructions
Step 1
Boil the broth first. Be sure to remove the limescale, strain it to make it lighter.
Step 2
Rinse the cabbage, cut into small squares. Cut the onion and roots into small slices, put in a soup pot, fry a little in oil. Instead of oil, you can use the fat skimmed from the broth for frying.
Step 3
Remove the pan from the stove, put the cabbage in it, pour over the strained broth, put it back on the fire, let it boil.
Step 4
Peel the potatoes, cut into cubes, add them to the broth, cook for half an hour.
Step 5
5 minutes before the end of cooking, put chopped lettuce or spinach leaves, tomatoes, pepper, salt. You can add some bay leaves for flavor.
