    • sugar - 1 tablespoon;
    • salt 1/4 tsp;
    • soda 1/4 tsp;
    • citric acid - 1/4 tsp;
    • vegetable oil - 1 tablespoon;
    • ghee - 50 g.

Instructions

Step 1

Take fresh chicken eggs, rinse thoroughly, break them into a deep bowl. To make the pancakes delicious, beat the whites and yolks separately, then mix and add the sugar and salt. Beat the mixture with a mixer on low speed for 1 minute, then increase it and continue beating for a few more minutes. You can use a whisk. Pour warm, but not hot, boiled water into the resulting foam and add baking soda, continue whisking. It is not required to extinguish soda beforehand.

Step 2

Sift flour, add it and beat until smooth without lumps. Wheat flour is better for early ripening pancakes, but its variety is not of fundamental importance.

Step 3

Stir citric acid in a little water, add to the dough, stir.

Step 4

In the absence of citric acid, the recipe is slightly modified. Knead the dough in the same way, add the same amount of sour milk instead of water. Dissolve the baking soda in a little water and pour into the dough just before baking, stir beforehand.

Step 5

To prevent the pancakes from burning in the pan and to be softer and more elastic, add a tablespoon of vegetable oil to the prepared dough. In order for them to spread well and be thin, pour into the dough, just before baking, a little boiling water, mix thoroughly.

Step 6

This recipe does not require raising the dough, so start baking the pancakes right away. A cast iron pan with low edges and a long wooden spatula are best for baking them. Heat the pan, do not grease or oil.

Step 7

Put the finished pancakes on top of each other, greasing each with melted butter on top. Wrap, let them stand for a few minutes. Serve hot.
