It is necessary

    • 1, 2-1, 5kg rabbit (carcass);
    • 400g chicken breast;
    • 1-2pcs. carrots;
    • 1 onion;
    • 100 g sour cream;
    • 2 eggs;
    • 4 cloves of garlic;
    • salt;
    • pepper;
    • Bay leaf;
    • potatoes;
    • tomatoes;
    • greens (dill
    • parsley);
    • lingonberry
    • rubbed with sugar.

Instructions

Step 1

Process the carcass. To do this, soak it for 1-2 days in cold water, which must be changed from time to time. Make sure that the water completely covers the rabbit. Remove the rabbit from the water, dry it. Cut off the shoulder blades of the rabbit, carefully make notches with a knife, but not completely, along the entire spine, so that it is easier to cut the finished carcass. Cut the garlic into thin slices and stuff the rabbit with them. Salt and pepper the carcass, put in the refrigerator.

Step 2

Prepare the minced meat. To do this, cut off all the meat from the shoulder blades, take the liver, heart and kidneys of the rabbit and cut into small pieces. Chop the chicken breast into small pieces. Peel and grate the carrots. Peel the onion and chop finely with a knife. Heat vegetable oil in a frying pan and fry the onions and carrots in it. Combine vegetables with chopped meat, salt and pepper everything well, add eggs and sour cream. Mix the prepared minced meat thoroughly.

Step 3

Stuff the rabbit with minced meat. Sew up the abdomen with a thick thread or stab it with toothpicks. Spread sour cream on all sides of the carcass. Grease a baking sheet with vegetable oil. Place the rabbit on top of it. Place in an oven preheated to 200 degrees. During baking, periodically water the carcass with the juice that stands out. Bake the rabbit until tender.

Step 4

Prepare a side dish. You will need to peel the potatoes, cut them into slices and sauté them in oil. Wash the tomatoes, dry and cut into small wedges. Wash and dry the greens.

Step 5

Transfer the finished rabbit to a large plate and cut into slices. Cover with potato wedges and tomato wedges. Decorate with herbs. Serve with lingonberries. Bon Appetit!
