Do you like borscht? It can be prepared in many varieties. Try borsch with prunes and mushrooms.
It is necessary

- - 2 potatoes;
- - 1 beet;
- 1/2 cup beans
- - fresh mushrooms;
- - 1 carrot;
- - 1 onion;
- - 150 grams of white cabbage;
- - 2 tablespoons of tomato paste;
- - sugar;
- - greens;
- - salt;
- - pepper;
- - vegetable oil;
- - 2 liters of water or broth.
Instructions
Step 1
Wash the beans and leave them in cold water for a couple of hours. Once this time has passed, drain the water and refill the beans with cold water.
Step 2
Put it on fire and bring to a boil. Then cook over low heat until tender. Cooking time is 40-60 minutes.
Step 3
The next component is potatoes. Peel it, wash and cut into small cubes.
Step 4
It's time for the basics. Boil 2 liters of water or broth (your choice). Dip the chopped potatoes in boiling water. Cook the potatoes for about 20 minutes.
Step 5
Wash the onions and carrots. The onions must be peeled and diced. Peel the carrots and rub half of the vegetable on a coarse grater.
Step 6
Now let's get down to the beets. The same actions that you performed with carrots: peel, wash and grate the whole beets on a coarse grater.
Step 7
Wash the mushrooms and cut into thin strips.
Step 8
As for the prunes, you will first have to soak them in hot water for about 10 minutes. Then free them from the seeds and cut into pieces.
Step 9
You still have the other half of the carrot. Cut it into thin "strips". Cut the cabbage into exactly the same "strips".
Step 10
We combine all the components of a delicious dish. Pour some vegetable oil into a preheated skillet. Place the carrots and beets in the skillet. Stir and simmer over medium heat for about 5 minutes.
Step 11
Add prunes and simmer for a couple of minutes.

Put half of the onion and the carrots that you have left to the resulting mixture. Simmer for about 3 more minutes, then add tomato paste to the mixture. Stir and simmer for another minute.
Step 13
Finally, add all the frying to the pan. Your frying pan has become loose. Put the onion you have left on it and fry it for a minute. Then add the mushrooms and fry, stirring occasionally, for another 3 minutes.
Step 14
In the last step, we add mushrooms, cabbage and beans to the pan. Season with salt, pepper and sugar. Cook the borscht under the lid over the slowest heat for 10 minutes.

Remove the dish from heat and let it steep for 20 minutes. You can add greens to borscht. Delicious borscht with mushrooms is ready.
