It is necessary

    • 1 kg beef or pork tenderloin;
    • 200 g fresh champignons;
    • 100 g lard;
    • 1 medium onion;
    • a glass of meat broth;
    • 1/2 cup 20% cream
    • 1 teaspoon of mustard;
    • 100 g of prunes;
    • 1/2 teaspoon dried thyme
    • salt and pepper;
    • 3 tablespoons of butter.

Instructions

Step 1

Wash and dry a piece of meat. Using a very sharp knife, carefully cut it lengthwise into two even layers. Wrap each of them in a plastic bag and gently beat them so that they are about 1.5 cm thick. When beating, try not to pierce the layer through, otherwise juice will flow out of it during cooking. Place one layer on a cutting board, salt and pepper.

Step 2

Rinse prunes and soak in warm water for 10 minutes. After it swells, remove the bones (if any) and chop it finely.

Step 3

Rinse the champignons in cold water, separate the legs, chop the caps finely. Cut the bacon into small cubes. Heat a tablespoon of butter in a frying pan, put lard in it and fry a little. Then add the mushrooms to the bacon and sauté for 5 minutes.

Step 4

Peel the onion and chop it finely. Add thyme, ground black pepper, salt, mustard and a tablespoon of butter to the onion. Spread the seasoned oil mixture evenly over the meat layer that has not been seasoned. Spread the mushrooms and prunes fried in bacon with the next layer. Cover with a second (seasoned) layer of meat, roll everything into a tight roll and tie with a harsh thread.

Heat the oil in a deep bowl. Fry the roll in oil over high heat on all sides until a crust forms. Pour in half of the broth, bring to a boil, reduce heat and simmer the roll for an hour and a half without a lid. Add the rest of the broth as the liquid boils away. Pour the cream into the pan about 10 minutes before the end of braising.

Step 6

Remove the thread, cut the roll into portions, place it on the lettuce leaves, top with the creamy sauce and serve. Cook boiled potatoes for a side dish.
