Okroshka is a wonderful summer first course. It is very simple to prepare, but most often it is based on kvass. However, as the basis for okroshka, you can choose something else, for example, tomato juice prepared in a special way.
It is necessary
- - 3-4 potatoes;
- - 2 carrots;
- - 2 eggs;
- - green onions;
- - 1 fresh cucumber;
- - 2 pickled or lightly salted cucumbers;
- - cooked meat;
- - salt;
- - 800 ml. tomato juice;
- - 200 ml. brine;
- - ground red pepper or Tabasco sauce;
- - mustard;
- - sour cream.
Instructions
Step 1
Let's start by preparing all the ingredients for this delicious dish. Wash the green onions and chop them finely. Onions need to be peeled, washed and finely chopped in the same way.
Step 2
Boil potatoes with carrots until tender. Then let them cool, peel them (if you boiled them in the peel) and chop finely too.
Step 3
Let's start with cucumbers. Both fresh and pickled cucumbers will go to this dish. Cut them into small cubes.
Step 4
Boiled meat, boiled sausage, heart - any similar product can be used, depending on what is currently in the refrigerator. Cut into cubes like all previous components.
Step 5
The last product that will go into our dish is eggs. Cook them hard-boiled, peel and chop finely.
Step 6
Mix all ingredients, add salt to taste.
Step 7
At the next stage, we prepare a filling for okroshka based on tomato juice. To do this, combine tomato juice with brine from lightly salted or pickled cucumbers. Add the juice of half a lemon and a little Tabasco sauce. If you don't have one, red hot pepper can be substituted for the sauce.
Step 8
After cooling, okroshka on tomato juice is ready for use.
