Rabbit meat is rarely found on the Russian table. Nevertheless, it should be noted that it has a high taste and is quite simple to prepare. a rabbit in a tomato can decorate both a festive and everyday table.

- 1 onion;
- 3-4 cloves of garlic;
- 2-3 tomatoes;
- celery stalk;
- 2 small zucchini;
- a bunch of rosemary;
- Bay leaf;
- 1.5 liters of tomato juice;
- vegetable oil;
- salt.
Instructions
Step 1
Prepare your rabbit carcass. Rinse thoroughly and gut if necessary. If the meat is frozen, leave it on a plastic-covered plate at room temperature for 2-3 hours. Separate the legs from the carcass, and cut the body itself in half. You can cook rabbit meat on the bone, or cut it and cut it into small pieces.
Step 2
Take care of vegetables. Peel and finely chop the onion, fry in a pan with heated oil for 5 minutes. Then chop the garlic and celery stalk, cut the carrots into strips. Add all these vegetables to the onion. Cook for another 5 minutes. Scald the tomatoes, peel them, chop and add to the vegetable mixture. Cook for about 5-7 more minutes until the carrots are done. Season with salt to taste, and then transfer the resulting mixture to a deep saucepan, preferably with a non-stick coating and pre-oiled with vegetable oil.
Step 3
Fry the rabbit pieces in vegetable oil for 4-5 minutes. Then put it on top of the vegetables. Pour the tomato juice over the mixture so that it covers all the meat and vegetables. Add a few sprigs of rosemary and bay leaves for flavor, and season with salt. Simmer the mixture over medium heat for 15 minutes.
Step 4
Peel the zucchini and cut into cubes. Place in rabbit and vegetable mixture. Cook for another 20-30 minutes. The rabbit meat should be soft and the sauce should thicken somewhat. Serve with a side dish. They can be fried or boiled potatoes, as well as rice.
Step 5
Change the recipe depending on your tastes and the availability of certain vegetables. Instead of zucchini, you can take eggplants, but it is advisable to fry them slightly beforehand. Also, in such a roast, bell pepper will be a good additional component. The composition of vegetables can be reduced as much as possible, leaving only onions, garlic and tomatoes.
