The homeland of this salad is France. Nicoise is present in almost all French restaurants, but you can try it without traveling abroad, since the ingredients for this dish are available in any large supermarket.

It is necessary

  • Ingredients for 6 servings:
  • For the salad:
  • - canned tuna - 400 g;
  • - eggs - 6 pieces;
  • - young potatoes - 12 pieces;
  • - 3 medium sized tomatoes;
  • - lettuce - 2 heads of cabbage;
  • - small red onion;
  • - green beans - 180 g;
  • - a handful of olives;
  • - 2 spoons of capers;
  • - canned anchovies - 5-6 pieces;
  • - pepper and salt.
  • For refueling:
  • - shallots;
  • - 4 sprigs of thyme and 2 sprigs of basil;
  • - a sprig of oregano;
  • - Dijon mustard - a teaspoon;
  • - 1/2 cup lemon juice;
  • 3/4 cup olive oil
  • - pepper and salt.

Instructions

Step 1

We start with dressing: remove the stems from fragrant herbs, leave only the leaves and grind them together with the shallots. Mix herbs and onions with lemon juice, olive oil and mustard, add salt and pepper to taste.

Step 2

Wash the potatoes thoroughly with a brush, but do not peel them. Fill with boiling water, bring to a boil, salt and cook for 10-15 minutes (or until tender). Drain the water, lightly press the potatoes with a fork and immediately pour over the dressing.

Step 3

While the potatoes are boiling, we are engaged in other ingredients: pour green beans with boiling water and cook for literally 3-5 minutes so that they are soft, but retain their crunch. We put the beans in ice water.

Step 4

Boil eggs hard-boiled, pour over boiling water, clean and cool. Cut into quarters or slices.

Step 5

Cut the onion and tomatoes into as small slices as possible, mix with three tablespoons of the dressing.

Step 6

Tear lettuce leaves with our hands, pour with a small amount of dressing, put on a dish. Put tuna in the center, and next to it warm potatoes, onions and tomatoes. Water with the remaining dressing.

Step 7

Decorate the salad with eggs, capers, olives and anchovies. Nicoise salad is ready!
