Step 1

Take fresh cow's milk. Milk should not be boiled and not too fatty. Place the milk in a warm, cool place for two hours. Take the infused milk at room temperature and pour into a deep glass cup.

Step 2

Pour the refined vegetable oil into a small ladle or saucepan and, without boiling, heat slightly on the stove. Do not use a microwave oven for heating, the oil heats up more unevenly in it and begins to bubble. Remove the oil from the stove and let it cool slightly. Pour the still warm butter into the milk in a thin stream. Add the egg. Shake slightly and beat with a hand mixer or blender until thick.

Step 3

Wash the lemon well, dry it, cut it in half and squeeze the lemon juice. Salt the juice and let it stand for half an hour. Add mustard to lemon juice. Do it like this, start whisking the lemon juice with a small whisk or fork and add the mustard little by little with a spoon. Whisk until the mixture is smooth. Let the mixture sit again for half an hour.

Step 4

Add mustard and lemon juice in small portions to a cup of whipped butter and milk. Whisk with blender on maximum power for a few seconds and transfer to a clean cup. Cover and refrigerate for a couple of hours. The chilled mixture can be served as a cold appetizer or sauce, seasoned with salads and other dishes.
