Kozuli is a traditional Christmas delicacy for residents of the Arkhangelsk province. Gingerbread toys are baked in the form of various animals - lambs, deer and even cats. The name of the ritual cookie is associated with the original spread of the goat-shaped gingerbread, the main animal in the north.

It is necessary

  • For the test:
  • - 300 g of honey;
  • - 1 egg,
  • - 150 g butter;
  • - 1 teaspoon of baking soda;
  • - 0.5 cups of sugar;
  • - 500-550 g flour (2/3 wheat, 1/3 rye);
  • - 1 yolk;
  • Spice:
  • - 1 teaspoon each: allspice (peas), cloves (in buds), ground ginger;
  • - 2 teaspoons of cinnamon;
  • - 0.5 teaspoon each: ground nutmeg, anise (in grains);
  • For icing sugar:
  • - 1 protein;
  • - 220 g of powdered sugar;
  • - 1 tablespoon lemon juice;
  • For decoration:
  • - zip packages;
  • - decorative dressing (sugar balls, M&M, marmalade, marshmallow);
  • - satin ribbon;

Instructions

Step 1

Heat honey with sugar over low heat until the crystals are completely melted. Then remove from heat, add baking soda, stir until firm foam. Add softened butter, stir thoroughly until smooth. Grate the ginger root and grind in a coffee grinder along with the rest of the spices.

Step 2

Pour spices and a little flour into the honey mass. Introduce the lightly beaten egg with the yolk. Stirring constantly with a spoon, sift the flour in portions into the dough. Subsequently, the dough will become thicker and it will become more difficult to mix with a spoon. Pour the rest of the flour onto the table and, after dumping the dough into it, continue kneading on the plane of the table.

As a result, you should get an elastic, but not a cool bun, if you put it on the table, it will float a little. Place the dough in cling film in the refrigerator overnight (preferably for a day). Let the dough sit for an hour at room temperature before using.

To make figurines, you can use cutting molds or cut out a paper pattern. Draw clouds with legs for the front and back, and small caliber discs for the body. Draw the head in the form of a heart, the horns - small circles.

Step 5

For one goat you need: 2 parts with legs, 2 discs, 1 heart, 2 miniature circles. The legs can be cut separately and connected to the body on a baking sheet by placing the body on a part of the legs and pressing it well.

Cover the baking sheet with parchment, lay out all the elements. Bake in the oven for 10-15 minutes. When you click on the finished cookie, the holes in the baked goods should not remain. But it is better not to wait for a strong change in color, otherwise it will burn and dry out. Cool the baked goods on a baking sheet.

Step 7

Make the frosting. Combine portions of protein with powdered sugar. Stir gently to avoid air bubbles. In a separate bowl, prepare a thick glaze for gluing parts and drawing ears, wool, bangs. Place the frosting in a zip bag, cut one corner. For the contour, the hole should be miniature, and for the thin glaze it should be larger.

Step 8

Describe the cooled gingerbread cookies. Apply the frosting to the middle of the figurine and gently, nudging with a toothpick, spread over the entire surface. Leave to dry for an hour. Cover unused glaze with cling film, it can be stored for about 2 days in the refrigerator. Dissolve the slightly thickened glaze with the egg white taken from the tip of a spoon.

Step 9

Collect the lambs. Glue the head to the torso with a thick glaze. Leave on for 15 minutes to harden.

Prepare ponytails - pieces of ribbons. Glue a ball on one end, and attach the free edge of the tape with glaze on the back of the lamb.

Next, connect the front and back parts of the body, between which lay round gingerbread cookies, having previously smeared with icing.

Mix 1 teaspoon of glaze with black dye. Paint the face: eyes, eyebrows, mouth, nose. If available, use a sugar pencil. Use a brush to paint the blush with red kandurin. Attach the head to the front half of the toy.

Decorate all the joints of the body parts and the figurines themselves: with icing, M&M candies, decorative sprinkles, marmalades or chopped marshmallows.
