In fact, risotto is a cross between porridge and soup. You can cook such a dish with seafood, vegetables, meat, poultry, mushrooms. For the preparation of risotto, rice with a high starch content is used. Mushroom risotto is best prepared with porcini mushrooms, which retain their smell and taste during cooking.
It is necessary

- - 400 g of porcini mushrooms;
- - 2 pcs. onions;
- - 60 g butter;
- - 2 tbsp. l. olive oil;
- - 50 g of grated Parmesan cheese;
- - 1 clove of garlic;
- - 1 tbsp. l. fresh parsley (finely chopped);
- - vegetable or meat broth;
- - pepper, salt to taste.
Instructions
Step 1
Melt the butter in a deep frying pan and fry the onions diced in advance until transparent. Add rice to the sautéed onions and sauté for seven minutes, stirring continuously.
Step 2
Next, pour one ladle of hot broth into the skillet and cook the rice over medium heat, stirring occasionally. Make sure that the consistency of the rice is creamy, add a little broth as needed.
Step 3
While the rice is cooking, in a second skillet, heat the olive oil and add the crushed clove of garlic (you don't need to peel the garlic). Once the garlic is golden brown, remove it. In the "garlic" oil, send the porcini mushrooms, peeled and cut into slices, beforehand. Grill them over high heat for six minutes, then season with salt and pepper, add a little broth and simmer for another six minutes.
Step 4
Remove the sautéed mushrooms from the heat and stir in the chopped parsley. Mix mushrooms with rice, heat for five minutes and add grated Parmesan.
