The blueberry financier is an almond-crumb muffin. They come out with a crispy crust. Such a delicacy will surprise your guests and decorate the festive table.

- - 80 g blueberries
- - 2 egg whites
- - 30 g flour
- - 45 g almonds
- - 75 g icing sugar
- - 50 g butter
- - a pinch of salt

Rinse the blueberries well first. Then melt the butter and leave to cool.

In a bowl, combine flour, a pinch of salt, powdered sugar, ground almonds.

Pour the butter into the flour mixture, stir until almond flour crumbs are formed.

Whisk the egg white in a mixer for 3-5 minutes. Add to flour crumbs and stir until smooth. The dough will turn out to be liquid. Then add the blueberries.

Grease the baking tins with butter and pour the dough into the tins.

Place in an oven preheated to 180 degrees and bake for 20-30 minutes until golden brown.

Remove the financier from the oven, carefully remove from the molds and leave to cool for 5-10 minutes. Sprinkle with powdered sugar and serve chilled.
