Lemon cheesecake is a delicious dessert that combines creamy taste with a light citrus aroma. This cheesecake is quite easy to prepare as you don't need to bake it.
It is necessary
- For the basics:
- - 200 g of cookies;
- - 2 tbsp. l. granulated sugar;
- - 150 g butter.
- For filling:
- - 2 cups heavy cream;
- - 1/2 cup granulated sugar;
- - 250 g cream cheese;
- - 1 glass of sour cream;
- - 1 lemon;
- - 1 bag of gelatin;
- - 1 tsp. vanillin.
Instructions
Step 1
Grind the cookies into small crumbs using a food processor or meat grinder. Place the crumbs in a large bowl, add granulated sugar and stir. Melt the butter over low heat and pour over the ingredients. Form a homogeneous mass, it should be moderately sticky.
Step 2
Take a baking dish and brush it with vegetable oil. Put the mass of butter and cookies in a mold and tamp well on the base, make low sides. Preheat the oven to 190 degrees and place the dish with the cheesecake base in it, bake for 10-12 minutes until golden brown. Remove from oven and cool.
Step 3
Prepare the lemon cheesecake filling. Take a saucepan and pour half a glass of heavy cream into it, put on a low heat. Then add gelatin to the cream, mix thoroughly. Simmer the mixture for two minutes, reduce heat. Add the remaining cream, vanillin and granulated sugar, cook for another 5 minutes, stirring constantly.
Step 4
Cool the mixture, then add the cream cheese and sour cream to it. Peel the zest from the lemon and squeeze the juice, add to the rest of the ingredients. Beat the creamy mass in a blender until fluffy, smooth. Fill the base with the creamy lemon mass, refrigerate for 2 hours. After the time has passed, remove the dessert from the refrigerator and serve.
