Cherry cheesecake cooks very quickly as it doesn't need to be baked. Instead of cherries, you can use any other berry you like. Home people will be happy to drink tea with such a delicacy.
It is necessary
- For eight servings:
- - 1, 5 cups of cookies or crackers;
- 1/3 cup brown sugar
- 1/3 cup regular sugar
- - 450 g cream cheese;
- - 2 cups heavy cream;
- - 70 g of butter;
- - 1/2 teaspoon of ground cinnamon;
- - 2 teaspoons of lemon juice;
- - 2 cups canned cherries;
- - 1/4 cup sugar;
- - 2 tbsp. spoons of water and starch.
Instructions
Step 1
Crumble cookies, mix with cinnamon, sugar, melted butter. Tamp on the bottom of the mold. Refrigerate while you cook the filling.
Step 2
Whisk the lemon juice and cream cheese. Add cream, sugar, continue beating until smooth. The mass should be airy.
Step 3
Pour the filling onto a chilled base, refrigerate for a few hours.
Step 4
Heat the cherries over medium heat, add sugar, mix. Add starch and 2 tbsp. tablespoons of water, mix thoroughly. Boil until thick, cool.
Step 5
Place the resulting cherry filling on top of the finished cheesecake.
