Kefir dough is one of the most convenient flour bases, which has many advantages. There are many variations of this test. Any of the recipes is interesting and not bad in its own way. You can bake pies with any filling from kefir dough.
General rules
In order for you to get a good dough on kefir, you should remember a few rules for its preparation.
- When using soda, it is put in kefir so that it is extinguished within 5-10 minutes.
- Yeast is added to flour. Better to take fast-acting yeast.
- Flour must be sieved several times before kneading to saturate it with oxygen.
Recipe 1
The dough for this recipe has a wonderful delicate texture. It differs in that there are no eggs in it. This only improves its quality.
This test will require the following ingredients:
- 3 tbsp. wheat flour
- 1 tbsp. kefir
- 1 packet of fast-acting yeast
- 2 tbsp. l. Sahara
- 0.5 tsp salt
- 20 ml refined vegetable oil
- 50 g margarine or butter
- a pinch of vanillin
- We must take warm kefir. Add vegetable oil and margarine (melt), sugar, salt, vanillin to it. Stir everything well.
- Mix yeast with flour and add portions to the mass. You should get a fairly soft base.
- Remove to a warm place for 30-60 minutes. Can be used for its intended purpose.
Recipe 2
Kefir dough can be made liquid. This dough is ideal for double-layer pies when the filling is filled with dough.
For batter you will need:
- 400 ml of kefir
- 1 egg
- 150-170 g flour
- 0.5 tsp soda
- a pinch of salt
Put soda in warm kefir. Let the kefir stand for 10 minutes. Beat in the egg. Stir well and start putting flour, which is sifted well. Stir the dough thoroughly so that there are no lumps. Can be used.
Recipe 3
This dough is prepared with kefir with the addition of margarine or spread. The dough is very tender, soft, keeps its shape well. It is better to take kefir more acidic so that it extinguishes the soda additive well.
The following components will be required:
- 3-4 tbsp. wheat flour
- 170 ml of kefir
- 0, 5 tbsp. l. granulated sugar
- 250 g butter margarine
- 2 egg yolks
- a pinch of salt
- 1 tsp soda
- 0.5 tsp baking powder
- Grind chicken yolks thoroughly with sugar, salt and soda. Heat the kefir and pour into the yolk mass. Stir well.
- Sift flour and combine with baking powder.
- Pour flour in portions into the mixture. Knead an elastic, homogeneous dough.
Recipe 4
This dough is prepared without yeast. Butter is added to it. The dough is indispensable for a quick pie.
Ingredients for yeast-free batter:
- 500 ml kefir
- 150 g butter
- 2 eggs
- 2 tbsp. l. Sahara
- 300 g wheat flour
- 0.5 tsp salt
- 1, 5 tsp baking powder
- Beat eggs well until fluffy.
- Melt the butter, add salt and sugar to it.
- Combine eggs, butter and flour and mix with baking powder. Stir well. You will get a liquid jellied pie dough.
