Apple pie - charlotte - is one of the types of baked goods that is very common all over the world. The pie is baked in different versions and not necessarily only with apples. There are peoples who bake it even with meat. The beauty of it is that it bakes quickly and is easy to prepare.
Charlotte without eggs
This version of charlotte differs from others in that there are no eggs in the dough.
To prepare this cake, you will need a glass (200 g) of flour, 4 apples, a glass of kefir, a glass of semolina, a glass of sugar, 30 grams of butter, cinnamon or vanilla sugar to taste, a pinch of soda, powdered sugar.
- Start cooking the cake with the dough. Pour kefir into a bowl for kneading dough, put soda in it and let it extinguish in it for a couple of minutes. Pour in the sugar and stir it well until it is completely dissolved. Pour semolina into kefir, mix. Let stand for a minute. Add butter (pre-melt). Sift flour, mix it with cinnamon and combine with the resulting mass. Mix well. You should get a dough similar in consistency to sour cream. Set the dough aside.
- It is better to take apples for charlotte sweet and sour or sweet. They need to be washed well. Clean if desired. Cut into small pieces or wedges. Mix apples with dough.
- Grease the mold with water or vegetable oil. It is advisable to sprinkle the bottom of the form with semolina. Can be covered with parchment paper. Pour the dough with apples into the mold. Place in an oven preheated to 180 C. Bake for about 40-50 minutes. Check the readiness of the cake with a splinter or a toothpick.
- Sprinkle the finished charlotte without eggs with powdered sugar.
Charlotte with jam
This version of charlotte is good because it can be cooked when there are no apples at hand, but you want a pie. Charlotte with jam is in no way inferior in taste to charlotte with apples. You can take any jam, but it is desirable that it is not very sweet, but a little sour. And also it should not be very thick or liquid, since the consistency of the dough depends on its consistency. Delicious charlotte is obtained from pear, apricot, quince jam and, of course, apple jam as well.
To prepare charlotte with jam, you will need a glass of any of your favorite jam, a glass of flour, 3 eggs, 30 grams of sugar, 10 grams of baking powder for dough, a pinch of salt, and powdered sugar.
- Charlotte with jam is prepared as follows: separate the whites from the yolks. Add sugar to the whites and beat well.
- Stir the yolks well and combine with the proteins.
- Pre-sift the flour. You can do this several times. Pour flour into the mixture.
- Now, carefully add the jam that you have chosen. The mass should turn out to be liquid, but not much.
- Pour the mixture into a mold, which is greased with oil or covered with parchment. Bake in the oven (180C) for 30-40 minutes.
- Sprinkle with icing sugar when serving.
