To cook pork "princely" you will need (for 4 servings):

- 700-800 g of pork neck in one piece;

- 4 - 5 tablespoons of soy sauce;

- 1 tablespoon orange juice;

- 3 tablespoons of tomato juice;

- spices: ground cloves, cinnamon, black pepper, ginger, salt;

- 2 cloves of garlic;

- raisins, prunes - 100 g;

- a few sprigs of dill.

Preparation

Rinse a whole piece of pork with cold water, dry with a towel and rub with a mixture of salt and spices on all sides. Make shallow cuts in the meat, about 3-4 centimeters deep, and put in them the garlic, cut into thin slices, raisins and prunes.

Make a marinade: Combine lemon and tomato juice, soy sauce, and finely chopped dill. Pour the sauce over the pork and leave to marinate for 15-20 minutes.

Cover the baking sheet with food foil, put the meat in its center, make high sides out of foil and pour the sauce remaining after marinating on the pork.

Place the baking sheet with meat in the oven, heated to 180-190 degrees, for about an hour. While baking, pour the marinade and juice over the pork.

The cooked meat should cool down, thinly cut into slices before serving.

For pork "princely" you also need to prepare a special berry sauce.

You will need:

- fresh or frozen cranberries (can be replaced with lingonberries or black currants) - 1 glass;

- sugar - half a faceted glass;

- water - half a glass;

- orange juice - 4 tablespoons;

- cognac - 1 tablespoon (optional).

Mix water and sugar in a saucepan (saucepan) and bring to a boil over low heat, stirring occasionally. Then add whole cranberries, orange juice and cognac, you can add a little pepper. Cook over low heat for 3-5 minutes. This sauce can be served with meat both hot and chilled.
