It is necessary

    • 800 grams of fresh mushrooms;
    • 3 onions;
    • 7-8 small tomatoes;
    • 80 grams of butter;
    • 4 tablespoons of grated cheese;
    • 1-2 tablespoons of chopped parsley;
    • ground black pepper and salt to taste;
    • 1 glass of milk;
    • 70 grams of butter;
    • 4 tablespoons of wheat flour;
    • 5-6 tablespoons of vegetable oil.

Instructions

Step 1

Peel fresh mushrooms, wash gently under cold water and cut them into small slices. Peel 3 medium onions, rinse and chop with a knife or blender for 1-2 minutes.

Step 2

Heat a frying pan with 5-6 tablespoons of vegetable oil and add chopped onion to it. Fry it for 2-3 minutes until light yellow, stirring occasionally and not letting it burn. Add mushrooms to the fried onions, salt and pepper and simmer everything over low heat for about 20-25 minutes.

Step 3

While the mushrooms and onions are stewing, prepare the white sauce. To do this, fry four tablespoons of wheat flour in a pan without oil. Never allow the flour to change color. Since in this case, the cooked sauce may have an unpleasant aftertaste.

Step 4

After a pleasant nutty aroma appears, cool the flour a little and mix it with pre-softened 80 grams of butter, dilute the resulting mass with 50 milliliters of milk at room temperature. Rub everything thoroughly so that there are no lumps left, pour in the remaining 200 milliliters of hot milk. Cook the sauce over low heat for about 5-7 minutes, then remove it from heat, mix thoroughly and strain through a sieve.

Step 5

Wash the tomatoes and cut each in half, if desired. Transfer the stewed mushrooms and onions to ceramic pots, add whole or chopped tomatoes there, sprinkle with grated cheese, chopped fresh parsley, mix everything and cover with hot white sauce.

Step 6

Heat the oven to 160-170 degrees and put the pots in it, without covering them with anything on top. Bake the mushrooms until golden brown appears on top. Serve with a salad made from fresh vegetables.
