Refreshing cucumbers filled with mushroom stuffing. A great light snack for a family outing picnic.
It is necessary
- - 3 cucumbers;
- - 500 g of mushrooms;
- - 50 g of white bread;
- - 1 large onion;
- - 1 egg;
- - 1 tbsp. a spoonful of tomato paste;
- - 1 tbsp. a spoonful of sour cream;
- - dill for decoration;
- - juice of 1 lemon;
- - fat for frying;
- - 1 tbsp. a spoonful of flour;
- - parsley;
- - salt and pepper.
Instructions
Step 1
Peel the cucumbers. Cut lengthwise and use a teaspoon to remove the seeds. Finely chop the mushrooms, stew. Cut the onion into small cubes.
Step 2
Prepare minced meat: in a separate bowl, combine finely chopped stewed mushrooms and chopped onions, add raw eggs, crush white bread. Add chopped parsley, season with salt and pepper. Mix the whole mixture gently.
Step 3
Fill the prepared pieces of cucumbers with minced meat. Fill half and leave half empty, cover the filled halves with them and tie them with culinary thread.
Step 4
Take any refractory dish and grease it. Place the tied cucumbers in it.
Step 5
In a separate bowl, combine the sour cream and tomato paste. Pour the resulting sauce over the cucumbers drizzled with lemon juice. Add a little flour to the sour cream-tomato sauce. Simmer the dishes with cucumbers over low heat for 20 minutes. Put the finished dish on a plate, sprinkle with chopped dill.
